What I’m Eating: Vegetable Fried Rice


What’s in it: carrots, zucchini, crimini mushrooms, celery, onion, sweet peas, spinach, brown rice, turmeric, ginger, cardamom, slivered almonds, salt, pepper, garlic, coconut milk.

How I did it: I steamed the rice in my rice cooker while I chopped everything up fine. I stirred the veggies in coconut oil, adding spinach last because all it had to do was wilt. It got added even after the rice, spices, and nuts.

I only used about a quarter cup of coconut milk. This is the stuff that comes in a can and has guar gum in it, so it’s thick. Gives it a softness and a slightly sweet taste which goes nicely with the cardamom.

Ginger and turmeric were fresh ground, but I used dried onion and minced garlic from a jar.

  1. Can you eat quinoa? I’ve recently discovered it as a rice-replacement (my little post-bariatric stomach doesn’t tolerate rice, dammit), and have been enjoying the hell out of it.
